Dairy-Free Lasagne

Comfort food favourite made without dairy. Use GF sheets if needed.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 500g beef mince (or 2 tins lentils)
  • 400g chopped tomatoes
  • 2 tbsp tomato purée, 1 tsp oregano
  • 9–12 lasagne sheets (GF if needed)
  • 500ml dairy-free béchamel (oat/soy milk + DF butter + GF flour)
  • 150g grated dairy-free cheese

Method

  1. Heat oil; soften onion and garlic.
  2. Add mince/lentils; cook through.
  3. Stir in tomatoes, purée, oregano; simmer 15 min.
  4. Layer sauce, lasagne sheets, and béchamel in a dish.
  5. Top with béchamel and DF cheese; bake 35–40 min at 180°C.

Tips

  • Veggie? Use lentils + mushrooms.
  • Short on time? Use ready-made DF white sauce.
  • Freezes well.
