
Gluten-Free Banana Bread (Egg-Free option)
Moist, simple loaf. Great for lunchboxes.
Ingredients
- 3 very ripe bananas
- 75ml vegetable oil (or DF butter, melted)
- 200g GF self-raising flour
- 100g brown sugar
- 1 tsp baking powder, 1 tsp cinnamon
- 2 tbsp ground flax + 6 tbsp water (egg replacer)
Method
- Heat oven to 180°C. Line a loaf tin.
- Mash bananas; mix with oil and sugar.
- Stir in flour, baking powder, cinnamon, and flax “eggs”.
- Pour into tin; bake 40–45 min until a skewer is clean. Cool.
Tips
- Add choc chips, walnuts, or blueberries if safe.
- Freezes well (slice first).
