Gluten-free banana bread loaf with slices on board and butter

Gluten-Free Banana Bread (Egg-Free option)

Moist, simple loaf. Great for lunchboxes.

Ingredients

  • 3 very ripe bananas
  • 75ml vegetable oil (or DF butter, melted)
  • 200g GF self-raising flour
  • 100g brown sugar
  • 1 tsp baking powder, 1 tsp cinnamon
  • 2 tbsp ground flax + 6 tbsp water (egg replacer)

Method

  1. Heat oven to 180°C. Line a loaf tin.
  2. Mash bananas; mix with oil and sugar.
  3. Stir in flour, baking powder, cinnamon, and flax “eggs”.
  4. Pour into tin; bake 40–45 min until a skewer is clean. Cool.

Tips

  • Add choc chips, walnuts, or blueberries if safe.
  • Freezes well (slice first).
