
Vegan Mac & “Cheese”
Creamy pasta bake without dairy or nuts (nut‑free option).
Ingredients
- 300g macaroni (GF if needed)
- 2 tbsp DF butter
- 2 tbsp GF flour
- 500ml oat/soy milk
- 3 tbsp nutritional yeast
- 150g DF cheese
- 1 tsp mustard
Method
- Cook pasta until al dente.
- Make white sauce: melt DF butter, stir in flour, whisk in milk.
- Add nutritional yeast, mustard, DF cheese.
- Mix with pasta, bake 20 min at 180°C.
Tips
- Add broccoli or peas for veg boost.
- Nut‑free if you avoid cashew sauces.
